About the Role
We are looking for a US Regulatory & Nutrition Affairs Specialist to localize our platform for American regulation and serve as our US nutrition authority, working remotely.
Knowledge of FDA food labeling regulation: Nutrition Facts panel, %DV, serving sizes (RACC), FALCPA/FASTER Act big-9 allergens.
Familiarity with FDA menu labeling (calorie disclosure for 20+ location chains) and state/local variations.
Experience with nutrient analysis using USDA FoodData Central or equivalent.
Exposure to regulatory review of software/labels or compliance documentation.
Comfort working with engineering and ML teams to encode rules into product.
Key Responsibilities
You will make Foodbud's US outputs regulator-grade.
Define US labeling rule sets — Nutrition Facts formatting, rounding rules, %DV computation, allergen declaration logic — and validate the product against them.
Localize the allergen taxonomy from UK-14 to US big-9, handling divergences (celery, mustard, lupin vs sesame) correctly.
Build US gold-standard validation datasets with the India ML team; audit AI outputs for regulatory accuracy.
Advise the US commercial team on compliance positioning; join enterprise sales calls as the regulatory authority.
Monitor FDA and state regulatory developments; maintain the compliance roadmap.
Author trust-building content — labeling guides, allergen resources — for the US market.
